Albondigas Soup

Ingredients
  • 24 - 32 pcs. of Que Rico Albondigas
  • 1 - 49oz can beef or chicken broth
  • 1 - 8oz can tomato sauce
  • 1 small onion-diced 1/4 inch
  • 3 medium carrots-diced 1/4 inch
  • 2 celery stalks- diced 1/4 inch
  • 1 clove of garlic, minced
  • 1 medium potato, diced
  • 1 medium zucchini squash, sliced
  • Bunch of fresh cilantro, chopped
  • 3 medium carrots-diced 1/4 inch
Cooking Instructions

  • Place ingredients in large, 5 qrt sauce pan.
  • Bring to a boil.
  • Simmer for 30 minutes.
  • Add salt & pepper to taste.
  • Garnish with fresh cilantro.
