Chocolate Dipped Beef Bacon

  • 6 slices Smoke Bar Ranch Beef Bacon
  • 4oz Semi-Sweet Chocolate Chips
  • 4oz Heavy Cream
  • 1/2Tbsp Red Chili Flakes, ground

1. Preheat oven to 350F with convection and cook bacon until crispy (or desired doneness). Rotate about half way through cooking to prevent hot spots. (about 12-15 minutes in our oven)
2. After cooking, lay bacon flat on paper towels or a cooling rack to cool and drain excess fat.
3. Pour Semi-Sweet Chocolate Chips into a heatproof bowl. (Optional: add Ground Chili as well)
4. While stirring frequently, slowly heat cream in a pot with medium heat (or microwave if you must) until it just begins to steam or bubble slightly.
5. Whisk Chocolate until it is combined with the Cream and smooth.
6. Once bacon is cool enough to hold its shape when picked up, dip bacon into chocolate sauce and lay flat on a plastic wrap covered tray or plate large enough to hold all of your bacon.
8. Place Chocolate Covered Bacon into the refrigerator to cool and set the chocolate. (At least 1 hour, chocolate will still be slightly sticky to the touch but will stay on the bacon when served.)
